    Description & Use: Garam means spices and masala refers to a mix. Thus Garam Masala is a very special blend of spices used in Indian cooking in much the same way as Europeans may add Mixed Herbs to everyday meals. Garam Masala adds flavour to curries and is often sprinkled over the surface of a simmering curry, where during slow cooking, the spice mixture contributes a rich flavour that would not otherwise be present. Garam Masala adds spice to food in a mild way and without the distinct cumin notes of curry. Garam Masala mixed with a little chilli powder and salt and sprinkled over fish before barbecuing, frying or grilling makes it delicious.

    To make Kashmiri Garam Masala: Simply add to 1 Tablespoon of Herbie’s Garam Masala, 1 teaspoon of ground cumin and 1/2 a teaspoon each of nigella seeds and ground nutmeg.

    For Garlic Bread; Mix 3 teaspoons Garlic Steak Seasoning with 3 Tablespoons softened butter. Slice breadstick and spread slices with seasoned butter, re-form loaf and pack tightly into an oiled tray. Spread any remaining butter over top crust. Cover loosely with foil and heat in oven at 180 C for 15 minutes until warmed through and crisp on top.

    Description & Use: Ginger root is the rhizome of a tropical plant that is related to galangal and turmeric. Herbie’s Spices ginger powder is produced from rhizomes that have been harvested when young. Ginger gathered at this stage is less fibrous and has a sweeter taste than ginger which has been left in the ground long enough to become hot and coarse.

    Special freeze-dried ginger powder retains the tang of freshly grated ginger and is ideal for using in uncooked dipping sauces and quickly prepared stir-fry dishes as a substitute for fresh ginger. Ginger slices are used in clear soups and marinades when the flavour is to be infused and the pieces removed before serving.

Poultry stuffings are given a delicious lift when about 3 or 4 juniper berries are slightly crushed and added to the stuffing, with herbs like Herbs de Provence, Italian Herbs or Mixed Herbs.
