    To make chai:
    put 2 cups of milk in a saucepan with 2 teaspoons of Indian tea leaves, 1 teaspoon of Herbie’s Spices Tea & Coffee Masala and 4 teaspoons of sugar (more or less to suit your taste preference).
    Bring to the boil, turn off the heat, allow to cool for a few minutes, then pour through a fine strainer to serve.
    Tea & Coffee Masala is also delicious when put into a coffee plunger with the ground coffee before adding hot water.
    Try it next time you have a dinner party, it makes after dinner coffee a conversation piece!

    TO MAKE TURMERIC CHAI
    1 tsp Turmeric Chai Spice Mix
    1 tsp Milk or warm water, and make into a paste

  • WHITE PEPPER PWD 20GM

    Other Common Names: Black Pepper, White Pepper, Green Pepper, True Pink Pepper. Botanical Name: (Piper nigrum)

    Description & Use: All true pepper whether black, white, green or pink comes from the berries of a tropical evergreen vine. Black peppercorns are the green unripe peppercorns picked from the vine and dried in the sun. The natural enzymes in the outer husk (pericarp) of the peppercorns turn the green berries black on drying, forming the volatile oil which gives black pepper its characteristic flavour. Green peppercorns are picked green and either put into brine or freeze-dried to prevent the enzyme reaction from turning the pericarp black.

    Herbie’s White pepper is made by soaking the nearly ripe peppercorns in water, then rubbing them to remove the pericarp before drying them. White pepper is hotter than black, however it lacks the “oily” taste found in black pepper, while the piperine content in the heart of the berry is more dominant. Pink peppercorns are the fully ripe berries which are generally put into brine to prevent the enzyme reaction from turning them black. Pink peppercorns have a sweet, almost fruity note combined with an underlying heat.
